I don’t go along with the Khazar theory. I used to though. I believe what happened to the Jews as they left Mesopotamia was the same thing as happened to Africans when they got to the new world and Gypsies as they progressed through Europe; they interbred with locals to varying degrees while preserving their culture/religion to varying degrees. New world blacks are sufficiently different from sub Saharan blacks that the former even argue is is because they are “Hebrews” rather than descendants of black/white couplings. Gypsies may have once looked like Indians, and of course Gypsies have been in Europe for a long time with hundreds of years to interbreed.
